Established since 1987 in the village of la Roche-Vineuse, at the foot of the Mâcon Rocks, Corinne and Olivier Merlin are master wine-growers, enthusiastic about their trade and the Mâcon and Beaujolais terroirs they work. Regarding each vine plant as a living being, an individual: this is the philosophy that Olivier and his whole team apply in the vineyard every day. The work, often done by hand, is rigorous and performed with the greatest care, so as to respect the plant and its environment. Corinne and Olivier do not use either synthetic fertilizer or weed-killer. The plots are tilled, using a draught horse for the ones at Moulin à Vent. Picking is done by hand, into crates, adapting to the ripeness on each plot, in order to deliver the best grapes to the fermenting cellar. For red and white wines alike, Olivier Merlin favours vinification and maturing in oak casks.
